Raw Grainless Granola

This is my favorite healthy cereal recipe ever!  I have been making this for our breakfasts for years now and we never get tired of it.  The nutrient value of this raw grainless granola is far above most other breakfast options.  Some people are sensitive to grains or they are trying to shed some unwanted pounds.  This cereal is perfect for the gluten free crowd, the health nut, or the weight watcher.

When I have a bowl of this, I feel full.  I feel energized.  It is an easy breakfast because you do not have to cook it and it can literally be tossed together in a matter of a few minutes.  My kids love it.

Raw Grainless Granola:

1/2 c. virgin coconut oil
2 c. ground flax seed
2 c. shredded coconut
2 c. chopped nuts
1/2 c. raw honey or maple syrup
1 c. dried fruit (cranberries, bilberries, or raisins)
2 T. cinnamon
1 t. vanilla
dash of salt

Melt oil.  Add all ingredients together and stir.
Serve raw with milk.
(raw cow milk, raw goat milk, coconut or almond milk)

Wow, virgin coconut oil is amazing!!  It lowers cholesterol, strengthens the immune system, fights candida yeast, it is anti-viral and anti-microbial, it helps people lose weight which is an even better plus, helps fight heart disease, good for diabetics, helps with brain function, and gives you energy to boot!!!

Warm the virgin coconut oil very slightly.  Do not get the oil too hot, just enough to melt it.

Grind your flax fresh.  Flax can get rancid if it is sitting out, so it is always best to grind fresh.  I use my vitamix blender to do a larger batch, but most people can get by with a little coffee bean grinder.  That works just fine.

Add the flax to the oil and stir together.  Flax is a good fiber and it is also a great vegetable form of Omega 3.  Omega 3 is good in supporting metabolism and brain function.  It is an essential fatty acid that our bodies need so desperately.  Flax also contain lignans which reduce the risk of breast cancer in women and prostate cancer in men.  Yeah for that!

Add raw honey for the most raw enzyme benefits.  Raw honey has anti-viral, anti-bacterial, and anti-fungal properties.  It promotes healthy digestion, it is a powerful antioxidant, and it also strengthens the immune system.  Why not use honey?!!!  It is liquid gold.

Add the shredded coconut-I use unsweetened shredded coconut.

Next, add your dried fruit.  I usually use cranberries or raisins, but today I tried bilberry fruit.  It is a bit more expensive, but it has so many wonderful anti aging properties, I was excited to reap those benefits!  Everyone needs a little help in that area, right?  Bilberry fruit has been used for centuries to help support good eye function.  It is loaded with antioxidants and also helps give energy.

Cinnamon is a powerful antioxidant that also helps stabilize blood sugars.  It is an amazing herb that needs to be added to this recipe.  The flavor it brings is also very tasty.

Adding nuts adds a wonderful texture to the granola.  I usually use walnuts, almonds, and pecans.  They all contain wonderful enzymes and are rich in omega-3 fatty acids as well.  The nuts help lower cholesterol, give a good source of vitamin E and are a good fat that helps with losing weight.  To even add more benefits, soak and dry them first.  That breaks down the phytic acid that is an enzyme inhibitor.

Vanilla contains chemicals called vanilloids that activate receptors in a similar way to cayenne pepper, which is reduces inflammation and improves brain functioning.  Vanilla has been known to calm stomach pains, reduce hunger, and help in digestion.  Plus, vanilla tastes good.  I have an article on how to make your own vanilla here.

Just a dash of salt will bring out the amazing flavors.  I like to use celtic sea salt or himalayan salt because I know I am getting so many minerals that way.

Stir all ingredients together.

Add some milk and enjoy!  For those of you that can not have diary, try using coconut milk or almond milk.
