Erin's Best Jambalaya

If you like spicy mixed with savory, I have a perfect recipe for you.  It is something people beg me to make—a real crowd pleaser.  All of my children and my husband go back for seconds on this dish.  I would love to hear from you after you try it and how your family likes it.

This dish is so versatile.  You can have it be a slimming THM S meal if you choose to just eat it alongside a salad.  You can make it a THM E meal if you add in the Not Naughty Noodles.  Or if you are not on a special plan, use brown rice.  I have active teens in the home and I put a bit on my salad before tossing in the rice for the rest of my crew.  If you like spicy, make my Creole seasoning just as it is written.  If you do not like so much spice, swap out the paprika for the cayenne.  My family likes to add a dollop of sour cream on the top to cut some of the spice and add a creamier style to it.  It is all up to you!

Erin’s Best Jambalaya

Start with 1 large smoked sausage (chicken, beef, or pork).  I used a Polish sausage.  Saute sliced sausage in skillet on medium heat until browned.

Add 1 minced onions, 1 minced green pepper, and 4 celery stalks, minced. Saute until onions, green peppers, and celery are translucent.

Next you will add 2 cups chicken broth, 1 cup chicken breast diced, 2 cups prepared salsa, 2 Tbs Worcestershire sauce, 2 Tbs Creole seasoning, and 1 cup tomato paste.  (My Creole recipe is on the Free Download that you can click on below with the Jambalaya.)  

Bring to a boil, stirring constantly while heating. Simmer for and hour to cook in the flavors.


Prepare 6 cups of brown rice *optional. Then toss the rice into the amazing sauce to extend the meal for a larger crowd or just because it tastes amazing.

Serve with a side salad.  Enjoy!
