Wholesome French Toast Casserole

This is a really great recipe that the whole family will enjoy.  It is about 2 days of simple preparation.  Work it into normal routine.  It is all put together the night before you bake it for your breakfast.

  • The night before baking, add 2-2 1/2 cups of Kefir to 4 cups of freshly ground spelt or wheat.  (you could use 1 1/2 cups of buttermilk and 1/2 cup of butter)
  • Thoroughly mix ingredients until sticky and moistened.
  • Cover and let stand for about 12 hours or overnight to soak and ferment.
  • You will notice it puff up a bit from the fermenting process.
  • Next morning: In separate bowl, add 1 cup of wheat flour, 1 tsp of baking soda, 1 tsp of baking powder, and 1 tsp of salt.  Next, add your spouted bread dough to the mixture and kneed in using your hands or processor with a dough hook attachment.  It may be a bit sticky yet which is okay.
  • Form into loaf pans.  Preheat your oven to 400 degrees.  Place them into the oven for 30-40 minutes.  You will notice the loaves nearly double in size with out yeast and there is no need to let the dough rise.  

Reserve this day old bread to create a french toast casserole.  Slice the bread and cut the slices into cubes.  Next, pile the cubes into a 9×13 pan.  Melt 8 oz. cream cheese and 1/2 cup of butter over the stove top.  Pour the mixture over the cubes.  Sprinkle something sweet over the top like cinnamon, zylotol, brown sugar, or maple syrup.  Then, add some frozen berries.  Now, you need to beat one dozen eggs with one cup of milk.  Pour over the top.  Let set overnight so the bread absorbs the liquid.  In the morning, preheat the oven to 350 degrees.  Place the french toast casserole into the oven for about 30-45 minutes until the a tooth pick comes out clean.  Serve with a topping like maple syrup, blended strawberries, blueberries, or kefir smoothie.  Yummy!
