What is on the menu today?  A Delicious Green Smoothie, A Garden Salad, and some Homemade Dressing!

I have always enjoyed eating fresh vegetables out of the garden.  Today, join Lori Alexander as she gives us some great ideas for getting our family to enjoy the fresh produce as well as get all the nutrition they provide.

Delicious Green Smoothie
Do you have a hard time getting your husband and children to eat enough fruits and vegetables?  I think I may have the solution!  I have tried blended salads before and I didn’t like them at all so I always juiced my vegetables.  Cassi came home the other day and told me about a blended salad she made and actually loved!Later on, I made one and loved it!  Finally!  I think you will also.  There is no exact science to it and you can make it different every day or find out which way your family likes it best, trying all kinds of ingredients.  Here are the ingredients we use~

  • 3 leaves of kale
  • 2 leaves of romaine lettuce
  • 1/4 cup parsley
  • 1 stalk celery
  • 1/2 apple
  • 1 frozen banana
  • Juice of one orange
  • Juice of half a lemon
  • 1/2 cup kefir or yogurt
  • Squirt of stevia
  • Ice Cubes

Blend it up real good in a blender.  We have a VitaMix which is the best blender ever!  It is heavy duty and lasts a long time.  It can blend anything up it is so powerful.  Yes, it is expensive but we use it every day multiple times so it is completely worth it.

By the river on its bank, on one side and on the other, 
will grow all kinds of trees for food. 
Their leaves will not wither and their fruit will not fail.

because their water flows from the sanctuary, 
and their fruit will be for food and their leaves for healing.

My Nutritious SaladIf you eat one big salad a day like the one you see above, your chance of getting cancer is greatly diminished.  The more greens and variety of vegetables you can put in the the better.

  • 1 head of romaine lettuce
  • 1 head of purple kale
  • 1 bunch of dandelion greens
  • 1 large head of broccoli
  • 1/2 head of green cabbage
  • 1 head of radicchio
  • 4 large carrots
  • 1 bunch of arugula

Every night my whole family has a large salad.  We put Roasted Chicken, avocado, Parmesan cheese, tomatoes, and my homemade Salad Dressing on top of it.  Everything I buy is organic, just the way God made it.

I don’t believe all the pesticides and chemicals they put on our food is healthy for us.  I believe they contribute to the astonishing rise in cancer.

Therefore, I encourage you to take the time to make big salads and put yummy stuff on top of it so your family will enjoy eating them.  Yes, it does take time but your health is so worth it.

Losing your health is not fun…I know.  Life is a lot more fun feeling well so take the time to feed your family healthy.  They may even thank you for it someday!

Homemade Salad Dressing and Dip…
This dressing has been in my home for years.  We never get tired of it.  I have never had even ONE person who didn’t like it!I use organic eggs from Trader Joes for the raw egg yolks. I have been using them for years and no one has ever gotten sick.  You can omit them but it isn’t as creamy.  Besides, I think raw egg yolks are good for you! 

To make this into a dip, mix with 1/2 hummus and 1/2 dressing.  YUM!

In a blender or Cuisinart put:

  • 1 egg yolk
  • 2 teaspoon sea salt
  • 1 teaspoon pepper
  • 2 teaspoon Dijon mustard
  • 2 garlic cloves
  • 1 teaspoon sugar or a tiny squirt of Stevia
  • 1/2 cup apple cider vinegar

Mix well and slowly add 1 1/2 cups of olive oil…not extra virgin olive oil or it is too strong, just regular olive oil.  I usually add 1/2 cup extra virgin and 1 cup regular olive oil because I know extra virgin is better for you.  Store in a glass jar in the frig for up to 3 weeks.  Enjoy!

  1. Really delicious!!! I cooked it several times for my wife, and she appreciated the recipe. I would like to know if sea salt is obligatory here. Can I do without it?
