Oriental Pork Fried Rice

What is on the menu today?  Oriental Pork Fried Rice
This is such a healthy, yet very flavorful recipe.  I like to make this dish after I have made a nice pork roast.  I use all the leftover juices and remaining meat.  It is a way to extend a meal.  Meal Extending is my middle name!  I am the type of mom that takes life one day at a time.  I figure out what we are going to eat about 20 minutes before meal time.

Meal Extending:
Okay, let me tell you what this phrase means for me.  I make a BIG meal.  It is a miracle– I made a BIG meal!!!  Everyone is happy!  I am proud of myself.  I watch as the meat gets picked away to almost nothing.  I take the rest of the meat and other leftovers (a tiny scoopful) and put them into a container in the refrigerator.

Next day…
I take the container out and I think.  I think about how I can make this measly amount of food make it another round.  I think about Jesus.  How he made 5 loaves and 2 fishes feed the thousands.  Of course I can not repeat the miracles of Christ, but I just like to remind myself of Him in all that I do.  I think it is really neat that Jesus was a miracle Meal Extender.

There it is–I extend the meal.  I see some celery and other veggies in the refrigerator.  Oh, and a bucket of rice in the pantry.  It is another miracle for me!  Rice is my friend!  Hey, a pot of rice flavored with a little meat is very good.

This is the thing-we have only so much food in the freezer, or on the canning shelf, or in the buckets filled with dried goods.  Meal extending is a must in our home.

Oriental Pork Fried Rice
4-6 c. vegetables chopped
1 onion chopped
3 eggs beaten
1/2 c. oil (coconut oil, olive oil, or butter)
1/2 c. Braggs Liquid Aminos
1-2 c. meat with broth (leftover from a roast-beef/pork)
6 c. prepared rice (jasmine, basmati, or brown)



1. Chop your vegetables.  I use celery, bok choy, carrots, and cabbage.  I usually chop about 8 cups of vegetables total because I love lots of veggies in our food.  Using a food processor, I can get the chop real fine and that makes it easier to sneak more veggies in for the kids.  It seems like I chop about 2 cups of each veggie.  You can add as many or as little as you like.  Add whatever veggies your family likes the most.  With oriental foods, the sky is the limit when it comes to fresh veggies.  The more the merrier.



2. Saute the veggies in your choice of oil until they are tender.  I prefer using expeller pressed coconut oil because I like the flavor it brings out.



3.  Pour your leftover pot roast with drippings into a frying pan along with 3  beaten eggs.  Toss it together until hot and the eggs are all cooked in.



4.  Mix the meat and the veggies together.



5.  Add your Bragg’s Liquid Aminos or soy sauce.  I like to use Braggs because I am getting a lot more nutrition:Bragg Liquid Aminos is a Certified NON-GMO liquid protein concentrate, derived from healthy soybeans, that contains the following Essential and Non-essential Amino Acids in naturally occurring amounts:

  • Alanine
  • Arginine
  • Aspartic Acid

  • Isoleucine
  • Leucine
  • Methionine
  • Phenylalanine

6.  Prepare the rice
I use brown rice because it is all I have on hand at the moment.  My first choice would be Jasmine or Basmati.  Oooh those are really great.
How to make 6 cups of rice
6 c. water or broth
3 c. dry, uncooked rice
Add rice and water to a stock pot.  Bring it to a boil.  Cover and simmer on low for about 20-30 minutes or until tender.



7.  Toss the rice into the meat and veggie mixture.

Meal Extending Reminder…

  • If there are any leftovers, you can make an Oriental Soup with it by adding broth and more water.  Season to taste.  Add more liquid aminos  to the broth.
  • Or, if you can purchase egg roll wraps, make some egg rolls with the leftovers.  Use the Oriental Pork Fried Rice for the filling.  Yummy.
